80年代的传统家常川菜“猪肉篇”——酸辣蹄筋今天无聊的刷着短 *** ,突然发现我的大数据推送里面全是批判类和感情类的 *** ,就是那种看的牙痒痒或者同情心爆棚的那种。感觉越看心理就越满足。我这个 *** 害妄想症的人, *** 病又犯了。总觉有人在惦记着我地里的那个“大红苕”。后来想了下隔壁老张家的大冬瓜还在我担心什么,要丢也不是我一个人丢。我就释怀了。说了一堆看不懂的废话不要细思。我们言归正传。
今天咱们来聊聊传统家常川菜“酸辣蹄筋”。四川人是把猪给玩明白了的,能吃的都给整成了名菜。今天这道酸辣蹄筋,在那个年代是一道家喻户晓的家常菜,可能现在新的做法和材料更丰富了,逐渐人们用牛蹄筋来代替猪蹄筋了,那个年代牛多宝贵啊,家里有牛的在十里八乡受的待遇都不一样。
酸辣蹄筋
一、原料
油发足筋150克、猪肥瘦肉 100克、冬笋 30克、菇蘑菇30 克、番茄 30克、姜、葱、川盐、料酒、胡椒粉、味精、醋、鲜汤、湿淀粉、芝麻油、化猪油、面粉适量。
二、制 法
1.先将油发蹄筋用温水泡 10 小时,捞出洗净,斜切成长 4厘米、粗7毫米的条,入盆加面粉少许,手搓去油腻,再用温水洗净,浸漂待用。
2.猪肥瘦肉、冬笋、蘑菇、蕃茄分别洗净,切成1厘米见方、厚2厘米的片;肉片入碗,加川盐、料酒拌匀、用湿淀粉码芡;姜洗净切成碎 *** ;葱洗净切成葱花。
3.锅置火上,下化猪油烧至六成热时,下肉丝炒散籽,放冬笋、蘑菇,掺鲜汤,放入蹄筋烧沸,打尽浮沫,下姜米、川盐、胡椒粉料酒略烧,用湿淀粉勾芡,再加味精、醋、芝麻油、葱花推匀,装入大汤碗内人席。
三、特点
此菜蹄筋柔嫩、酸辣味浓、爽口解腻,可开胃醒酒。

- 盐 4克
- 酱油 15毫升
- 老抽 10毫升
- 料酒 15毫升
- 水量 1000毫升
1、将牛腩和牛蹄筋切成3厘米块;
2、锅内倒入水,将切好的牛腩放入烫洗,煮出血沫后捞出;
3、锅内放入干辣椒、葱姜、大料、桂皮、香叶,然后将焯好的牛腩放入锅中;(调味料:葱6小段、姜3片、大料2个、桂皮1块、干辣椒4个、香叶1个)
4、再放入郫县豆瓣酱、黄豆酱、酱油、老抽、料酒、 *** 、盐等调料,加入1000毫升水;(调味料:豆瓣酱20克、黄豆酱20克、 *** 10克、盐4克、酱油15毫升、老抽10毫升、料酒15毫升)
