我自己是四川人,今天就用川菜的做法,跟大家分享鱼香肉丝的做法,口感酸甜微辣,特别的开胃下饭,下面就跟我一起来看一下 *** *** 吧:
1.准备猪瘦肉切成丝,(可以用腿肉和里脊肉,我今天用的是梅花肉)放入碗中,加入适量的淀粉,适量料酒,再来一点点生抽和老抽拌匀,最后再加一点点油拌匀。(放油能防止肉脱浆,而且肉下锅的时候不容易粘锅。)
2.现在来准备一些配菜:准备一些胡萝卜,木耳,青椒切成细丝,放碗里备用。
3.准备一些泡椒和泡姜剁成细末,再切一些蒜末和葱花。
4.接下来调一个料汁儿:准备半碗清水,加一勺白糖,一勺陈醋,一勺生抽,一勺蚝油,加半勺淀粉,适量盐,一起搅拌均匀,先放一旁备用。
4.锅里加适量油,油温五成热的时候,把肉丝倒进去滑散,盛出放碗里备用。锅里留少许底油,加一勺郫县豆瓣酱,再把切好的蒜末,泡姜和泡椒加进去,炒出红油。
5.加入肉丝翻炒均匀再拨到一边,加入切好的配菜翻炒2分钟。
6.把肉和菜都炒熟,加入调好的料汁翻炒,最后再撒上葱花拌匀,出锅装盘,美味即成。
