关于鸡胗好吃的做法,有的人喜欢卤煮的软烂入味,有的则喜欢爆炒的脆嫩爽口。其实无论卤煮还是爆炒,各有优点,我都非常喜欢。今天感觉胃口不好,一点食欲都没有,突然很想吃香辣脆嫩的爆炒鸡胗。于是去市场买了新鲜的鸡胗回来一顿爆炒,看着鸡胗香辣下饭的模样,胃口和心情一起愉快起来。

我看到一些食谱介绍:为了保持鸡胗的口感脆嫩,将鸡胗切花刀后焯水,再经过七成热的油炸两分钟,这样先煮后炸再爆炒的做法,能让鸡胗保持很好的口感。但是这个做法太耗油,而且鸡胗本来就自带腥味,这些炸过鸡胗的油也不好拿来炒别的东西,这更适合在饭店 *** 作,不适用于自己在家 *** 。在炒制前,我一般都会先腌制好鸡胗再炒,这是保持脆嫩且入味的有效 *** 之一, *** 作起来更简单方便。然而在炒制时也需要注意两个要点:一是大火爆炒;二是放醋的时机。有的人喜欢先放酱油后放醋,有的则会先放醋后放酱油,究竟哪个做法是正确的,下面我会在食谱的 *** 过程中给大家揭晓。


【爆炒鸡胗】

材料:鸡胗300克、小米辣4个、姜1小段、蒜3瓣、香葱3根、特鲜酱油、料酒、香醋、食用油、盐、蚝油

将附在鸡胗上多余的杂质去掉,用小刀刮一下鸡胗内壁,冲洗干净后切薄片(大概一元 *** 的厚度)。 挑选新鲜的鸡胗,这能从外观的颜色看出来。新鲜鸡胗是紫红色,而且摸起来有弹 *** 。

蒜头剁蓉或者切片,姜切丝,小米椒切圈,香葱切段(葱绿和葱白分 *** )。

先用清水泡一下鸡胗,可去血水,然后将鸡胗沥干捏干水分后再进行下一步腌制。用少许盐、料酒、生粉抓匀后腌制20分钟左右。

锅里倒入适量油加热,爆香姜蒜。再倒入鸡胗快速翻炒至变色。

鸡胗变色后倒入葱白和小米椒翻炒均匀。喜欢吃辣的,可以加多点小米椒或者泡椒。

首先倒入白醋翻炒均匀,再用适量特鲜酱油、少许老抽、蚝油调味后翻炒均匀。此时可以放一点砂糖提鲜,不过我用的是特鲜酱油,味道比较鲜,是不需要放糖提鲜的。

注意:白醋和酱油的先后次序不可搞错,必须先放白醋翻炒后再放其他调料,这样能增加鸡胗脆爽的口感。

最后关火后倒入葱绿翻炒均匀即可。因为我不喜欢葱煮太熟,关火后倒入刚好。

桐妈小贴士:

①鸡胗自带腥味,可以在切片后再次用清水反复抓洗,这样既可去腥也可去血水。

②鸡胗结构细密,不建议直接炒,需提前腌制才能更好入味。

③如果想成品的色泽更漂亮,可以调一点淀粉水,在出锅前倒入淀粉水勾芡就可以。

④全程需大火快速爆炒。

今天向大家推荐的这种鸡胗的新做法,其实是从烧烤摊上借鉴而来的,以油炸的来代替炭烤的方式,提前将它们腌制入味后,再将它们炸熟、炸透,再趁热撒入烧烤料(或者麻辣香等等),吃起来极其的美味,不仅做法简单,而且具有烧烤特有的风味,口感焦香入味、咸香适口,集香、辣、酥、脆、焦等多种味觉体验,和啤酒搭配是“一绝”。

【食材配料】:鸡胗、烧烤料(孜然粉+辣椒粉+盐,或者麻辣鲜)、十三香、食用油、葱、生姜、料酒。

【 *** 过程】:

1、首先,去超市中挑选1包新鲜的鸡胗,拿回家后把它们清洗干净,先将它们平放在案板上,先拉直,再用刀从它们中间竖着划开(刀口控制在1-2厘米左右,状态如上图所示),全部弄好后,装入碗中备用。

2、然后,在碗中放入适量的葱段和姜片,再来少许去腥的料酒,和十三香,将它们充分搅拌均匀后,放在一旁腌制1个小时(时间务必留足,否则,不容易入味)备用,(待会儿,油炸的时候,记得将多余的葱姜挑去)。

3、锅中倒入适量的底油,待油温提升至5成(150度)热时,再将腌制好的鸡胗逐个下入热油中,全程开中小火浸炸,直到将它们炸至表面焦黄、卷起、完全熟透为止捞出,控干油分后,盛入盘中备用。

?4、最后,再在盘中撒入少量的烧烤料(干料),即可完成,这样做出来的鸡胗,吃起来外酥里嫩、咸香适口,和啤酒搭配无与伦比,超级的美味,做法简单,风味独特,满满1大盘不够吃,如果大家卤的吃腻了,赶紧来试试吧,保证大家会爱上它。
