菇菌鸡煲

周末和丈夫一起逛超市,丈夫看到超市有新鲜的茶树菇和白玉菇,他说:“天气忽然变冷,容易感冒,我们多吃菇菌类有利于增强免疫力,提高疾病抵抗力。”他说得有道理,白玉菇、茶树菇都是高蛋白、低脂肪,氨基酸含量高,还有很多身体必须的微量元素,多吃菇菌类会起到保健作用。

用砂锅 *** 菇菌鸡煲,砂锅会激发菇菌和鸡肉的鲜美到极致。这个鸡煲 *** 简单,但

菇菌和鸡肉搭配在一起会给人惊喜, 上桌前能闻到茶树菇和干香菇的香味,一大锅大家用勺子舀着舀着就吃光了,汤汁都不剩。

【材料】

鸡 半只(600克),干香菇 30克,新鲜茶树菇 200克,

白玉菇 150克,红枣 6颗,枸杞 适量,香菜 少许

姜 15克,盐 3克,黄酒 15毫升,

【做法】

1 用来 *** 菇菌的材料:干香菇用水泡软,新鲜茶树菇和白玉菇切去蒂部,洗净

2 鸡洗净斩件

3 砂锅烧热放油,爆香姜片

4 把鸡块放入砂锅,爆香

5 黄酒放入鸡块中,拌匀

6 放香菇,炒出香味

7 把茶树菇、白玉菇、红枣和水一起放进砂锅里,煮沸后转中火煮

8 将菇类煮熟后,撒些枸杞,放盐调味,放上香菜即可

*** 菇菌鸡煲可以用茶树菇、白玉菇,也可以用新鲜香菇、白蘑菇或者杏鲍菇,菇菌类和鸡块一起很鲜美,又很营养

油豆腐炒青椒

材料:油豆腐,青椒,盐,食用油,葱姜末,鸡精

做法

1,油豆腐用热水清洗一下,,青椒也洗净切块待用。

2,锅中放适量油,油热后放入葱姜末稍炒,再倒入青椒煸炒2分钟这样;然后倒入待用的油豆腐翻炒。

3,加盐大火翻炒几下,然后加少许水焖1到2分钟,然后加鸡精炒匀即可。


生爆盐煎肉

材料:五花肉(偏瘦);蒜苗;二荆条辣椒;大头菜;豆豉;郫县豆瓣;糖;植物油

做法

1、五花肉切薄片(可以冻一会儿再切)二荆条对半再对半切成长条,大头菜切片,豆豉斩碎。蒜苗切段

2、锅里放一点点油,加入五花肉熬,时间会比较长,中途多出来的油用碗盛起来下面很好吃~

3、等五花肉到色彩浓重了,肥肉已经卷起并且不那么白,下郫县豆瓣炒香

4、加入大头菜,豆豉,辣椒中火翻炒

5、加入蒜苗,加糖调味大火迅速翻炒起锅~

茶树菇烧豆腐


食材:豆腐200克、茶树菇300克、蚝油、盐、姜、青椒1个、胡萝卜1根;

做法

1、茶树菇用淡盐水浸泡,洗净备用,青椒切菱形片;胡萝卜切片;豆腐切片;

2、锅中倒油烧热,再放入豆腐片煎至两面金黄,盛出;

3、先爆香姜,放入茶树菇;

4、再放入青椒、胡萝卜与豆腐一起拌炒均匀;

5、加入蚝油及适量水,一起炒匀后用小火慢慢烧至入味,再放入少许盐调味,即可

洋葱鸡煲


食材:鸡半只、洋葱 1个、葱 适量、生抽 1汤匙、老抽 1汤匙、料酒 1汤匙、糖 1/2茶匙、精盐 2茶匙

做法:

1,半只鸡斩成小块,冷水下锅,焯水后捞出洗干净。

2,洋葱切去两头,切成小块备用。

3,锅中热油,倒入洋葱翻炒片刻,然后倒入焯过的鸡块,翻炒均匀。

4,锅中依次倒入料酒、生抽、老抽,翻炒均匀,然后倒入糖和盐,翻炒均匀。

5,倒入热水没过鸡块,大火煮沸后,盖锅盖焖15分钟,15分钟后,开大火收小汤汁即可。

红烧鸡块


食材:仔鸡500g,盐适量,姜1块,葱1段,香葱适量,白糖1茶匙,啤酒,油,生抽适量。

做法:

1.鸡肉切块焯水沥干,姜切片、葱切段、香葱切小段备用。

2.炒锅上火热后倒入油,待油6成热,放入姜片和葱段炒香。

3.倒入鸡块煸炒微黄,倒入啤酒和酱油,放入白糖,大火烧开,小火焖烧25分钟左右,大火收汁,上盘撒香葱即可。

酸辣脆猪皮


材料:炸猪皮、洋葱、青椒、植物油、精盐、陈醋、红油豆瓣酱、生姜

做法:

1、炸猪皮用开水煮过后用清水浸泡数小时,直至猪皮膨胀有弹 *** 。

2、洋葱去皮切成条,青椒洗净,去籽后切成小段。

3、把泡好的猪皮切成细条。

4、起油锅,放入姜片爆香。

5、放入一汤匙红油豆瓣酱,炒出红油。

6、倒入切好的炸猪皮,翻炒均匀。

7、把切好的青椒段倒入锅里炒匀。

8、放入洋葱,快速翻炒。

9、调入适量精盐,沿锅边烹入两汤匙陈醋,过火,翻炒均匀即可出锅。

香辣鸡煲的 *** (附秘制调味油配方制法)

特点:

这款鸡煲卖得很火,与传统清香味的汤煲不同,它属于麻辣味型。主料选用乌冠乌脚的农家散养土鸡,盛器是陶制的砂煲,调味的方式、 *** 则与火锅接近;当然,由于味道重麻辣鲜香,故秘制调味油的用量也偏重。

原料(初加工批量):

桶装纯净水50千克,净光 *** 只(约15千克)干香菇 *** 克,干茶树菇100克,老姜(拍破)80克,蒜瓣80克,大葱150克,胡椒20克,料酒300克

调料(炒制单锅用量):

泡椒100克,秘制调味油500克,郫县豆瓣酱100克,鲜小米辣50克,花椒5克,芋儿100克,水发笋段100克,盐、白糖、味精各适量。

秘制调味油的炼制:

原料:色拉油50千克,糍粑海椒15千克,花椒1500克,紫草75克,大葱 *** 0克,八角400克, *** 300克,桂皮200克,草果150克,香叶70克,砂仁70克,小茴香50克,白蔻50克,灵草30,克肉豆蔻30克,白芷20克,排草20克, *** 10克。

制法:

1、把草果、白蔻、砂仁拍破后,手工除去籽,然后与其他辛香料一起用小型粉碎机(不加筛网)打碎成大颗粒状。

2、色拉油入不锈钢桶里烧热后,关火投入紫草,把油搅匀调成紫红色时,加大葱以增香,稍凉后再捞去大葱和紫草不用。

3、待油温降至四成热时,放入糍粑海椒并边放边搅动,稍后放入花椒及13种香辛料。

4、重新开中小火将油继续加热,边加热边用钢铲去搅动桶里边的油料,目的是使其不糊不粘桶。

5、将油炼制2小时后,舀一勺油起来察看,如果油色红亮、清澈不浑浊,便说明油炼得差不多了。

6、关火加盖让桶里的油焖制一个晚上,让麻辣辛香味慢慢地浸入到油里边后,沥出料渣即得秘制油。

*** *** :

(1)把治净的光鸡斩成块,(菜师傅:404583 *** )投入沸水锅里先汆去血水;另把干香菇、干茶树菇用水泡胀,芋儿、笋子则下锅煮熟后,用凉水漂起来待用。

(2)取一块干净的纱布,将泡过的香菇、茶树菇以及姜、葱、蒜、胡椒等料包起来后,待用。

(3)一个大不锈钢桶里注入纯净水和泡菇的水,放入纱布包和鸡块并开大火烧沸后,加入料酒并撇去汤面上的油沫,稍后改小火慢慢煨炖,待鸡肉炖至八成熟时关火,然后让其一直浸泡在汤中(这是为防止捞出鸡块后吹干水分而影响到口感)。

(4)开餐前,先捞去纱布包不用,再将净锅上火,注入秘制调味油烧热后,取750克鸡块入锅煸炒至紧皮,然后加放豆瓣酱、小米辣、花椒、泡椒等继续煸炒至出香,等加入炖鸡的原汤烧开后,加入盐、白糖、味精调味。

(5)最后全部翻入已经预热过的砂煲里,加放芋儿、笋段等烧入味便可上桌。

注:

麻辣鸡煲一般要吃原汤味碟:味碟碗里须备葱花、香菜末和蒜泥。临上桌时,在砂煲里舀一些原汤兑进去便好。

红烧长江鮰鱼


原料:

活鮰鱼1只(约1000克),葱,姜,香葱花,酱油,料酒,白糖,味精。


*** :

1、将鮰鱼宰杀治净,背部改花刀;

2、锅入油烧热,入葱、姜煸香,放入鮰鱼,加酱油、料酒、白糖、味精、清水大火烧开,改中火焖20分钟至汤汁浓稠,出锅装盘,点缀香葱花即可。


雪菜爆竹鸡


原料;

活野生竹鸡,鲜春笋,毛豆粒,黄雪菜,红椒,生姜,蒜子,香菜叶,料酒,盐,白糖。


*** :

1、将竹鸡宰杀治净,冲水去血污,斩件;

2、将春笋治净,切块,红椒切块,生姜去皮,切片,黄雪菜洗净;

3、锅置火上,入油烧热,入生姜片、蒜子、毛豆粒、黄雪菜炒香,放入竹鸡块,加料酒焖制10分钟,加入春笋块、红椒块爆炒,加少许清水焖制3分钟,加盐、白糖调味,翻炒均匀,出锅码盘,点缀香菜叶即可。


五柳脆鲈鱼


原料:

新鲜鲈鱼1条,五柳菜,蛋白,白醋,茄汁,番茄汁,黄糖,盐,生粉。


*** :

1、将鲈鱼治净,蘸蛋白,拍生粉,入油浸炸至酥脆,捞起放到碟中;

2、锅内入五柳菜,加白醋、茄汁、番茄汁、黄糖一起煮成糖醋汁,淋到鱼身上即可。


菌汤鲮鱼球


原料:

新鲜鲮鱼,陈皮碎,干茶树菇,干杏鲍菇,冬菇,海鲜菇,鸡骨,老鸡,盐,白糖。


*** :

1、将新鲜鲮鱼刮出鱼青,加陈皮碎制成鲮鱼球,汆熟;

2、将干茶树菇、干杏鲍菇泡好,加冬菇、鸡骨、老鸡煲3小时制成菌汤;

3、将菌汤、鲮鱼球放到小盅内,加海鲜菇,上笼蒸热后即可。


胡椒蚝仔煮韭菜


原料:

韭菜 *** 克,蚝仔肉100克,鲜腐竹50克,红椒2片,姜粒10克,浓鸡汤600克,胡椒粒1克,盐、白糖、味精、鸡粉、鸡汁各适量。


*** :

1、将韭菜去头、尾,切成10厘米长的段,蚝仔肉洗净、飞水,待用;

2、净锅入清水、盐、白糖、油煮开,下韭菜飞水至熟,沥干水分,装入锅仔,围边放置;

3、依此法将腐竹飞水后装入锅仔中间;

4、锅入油烧热,下姜粒、胡椒粒略爆,入浓鸡汤,加盐、味精、鸡粉、白糖、鸡汁调味,放入蚝仔,大火煮约1分钟,将浓汤收至400克左右,倒入锅仔,加热上桌即可。


芋头糕


原料:

自制肉臊, *** 甲仙芋头,泡菜,香菜叶,糯米粉,自制油糕酱,盐。


*** :

1、将芋头去皮,洗净,切粗条,加盐腌制,入模具内垫底;

2、放入一层糯米粉,加一层肉臊,如此重复两次,用保鲜膜封好,入蒸箱蒸45分钟~60分钟,取出,入冰箱冷藏定型,切块,码盘造型,淋油糕酱,点缀香菜叶,搭配泡菜一同上桌即可。

3、肉臊的配方:五花肉,香菇,五香粉,干葱头。油糕酱的配方:生抽,白糖,姜,糯米粉。


鳕鱼酥


原料:

净鳕鱼,鸡蛋,黑、白芝麻,黑胡椒粒,面粉,猪油,盐,白糖。

1、将鳕鱼切丁,加黑胡椒粒、盐、白糖调味成馅;

2、取部分猪油,加部分面粉制成油酥,将余下猪油、面粉加清水制成水油酥,包入油酥,擀成厚约0.3厘米的酥皮,切成6厘米~7厘米的正方形,加入馅料,从下至上卷一半,刷一层蛋清,两侧按扁成长方形条,表皮刷一层蛋黄液,撒匀黑、白芝麻,入预热好的烤箱以上、下火180℃烤10分钟,取出,放入已装饰好的盘中造型即可。

手撕茶树菇

材料:茶树菇、干青花椒、干红椒、姜末、葱段、油、盐、蚝油

做法:

1、茶树菇洗净撕条备用。

2、生姜和葱切成末备用。

3、干红椒剪成段,青干花椒备用。

4、锅内烧开水,下茶树菇烫10秒捞起滤水。

5、坐锅热油,下姜葱末煸香。

6、倒入干红椒和花椒继续煸香。

7、倒入茶树菇翻炒。

8、炒至全熟,加食盐、蚝油调味,撒葱段即可。

金汤芦笋

材料:芦笋、咸蛋黄、枸杞、蒜、料酒、糖、盐、油

做法:1.大蒜拍扁去皮切成末,芦笋洗净斜刀切成段。

2.沸水中加少许盐,焯烫芦笋至熟,捞起沥水备用。

3.炒锅加油,爆香蒜末,倒入咸蛋黄压碎翻炒,淋入料酒。

4.加适量开水,煮沸至汤色略变白,放入枸杞再次煮沸,调入白糖、盐。

5.放入芦笋,翻炒均匀即可。

三汁焖锅

主料:鸡翅中300克彩椒1个胡萝卜2根大蒜1头土豆2个红薯 1个西芹200克;

辅料:料酒10克番茄酱20克蚝油40毫升甜面酱40克酱油10毫升蜂蜜适量黄油10克盐5克;

做法

1.准备食材;2.鸡翅洗净,正反各划两刀;3.倒入料酒、盐,搅拌均匀,腌制20分钟;

4.红薯、土豆、胡萝卜、彩椒和西芹分别洗净,切成小块,蒜剥蒜瓣备用;

5.调酱汁:3勺甜面酱、3勺蚝油、1勺半番茄酱,这就是所谓的3汁了。

再加1勺酱油,1勺蜂蜜,1勺料酒,1小勺盐,搅拌均匀,酱汁就调好了!

6.倒入后,搅拌均匀。7.锅中加入一小块黄油,待黄油融化。

8.将切好的蔬菜和蒜瓣放入锅内翻炒几下。加水没过蔬菜的一半就可以啦;

9.把腌制好的鸡翅铺在上面;10.盖上锅盖,小火焖10分钟;11.开盖把调好的酱汁铺在鸡翅上;

12.再盖上锅盖,小火焖5分钟;13.开盖大火收汁,再翻炒几下,就ok了!14.吃完肉还能加水涮火锅。

藕带虾仁

  食材:藕带,鲜河虾,秋葵,红椒段,白果,蓬莱松,红加仑,可食用鲜花,葱段,姜片,蒜片,盐,白糖,鸡粉,湿淀粉。

  做法:

  1、将河虾治净,取虾仁汆水20秒钟左右,捞出沥水待用;

  2、藕带、秋葵分别洗净,切段,汆水待用;

  3、白果入清水中,加少许白糖,煮2分钟~3分钟,捞出沥水待用;

  4、锅入油烧热,入虾仁、藕带段、秋葵段、白果、红椒段、葱段、姜片、蒜片,加盐、白糖、鸡粉,快速翻炒,勾玻璃芡,出锅,拣去葱段、姜片、蒜片,码盘,点缀可食用鲜花、蓬莱松、红加仑即可。

嗜嗜滑鸡煲

食材:红葱头150克、鸡半只、柿子椒1个、红椒1个、鸡蛋1个、蒜8瓣、姜8片、豆豉5克、食盐1/4茶匙、料酒1汤匙、海鲜酱1.5汤匙、蚝油1汤匙、水2汤匙、白砂糖1/2茶匙、黑胡椒粉1/4茶匙、植物油适量、玉米淀粉1汤匙

做法:

1、鸡斩小块,干葱(红葱头)去皮,生姜切片,大蒜去皮拍碎,青红椒切菱形块;

2、依次把盐、料酒、玉米淀粉加入鸡块中拌匀,最后加入少许鸡蛋清拌匀;

3、豆豉剁碎,将调味料放入碗内调匀;

4、锅内热植物油,放入鸡块滑炒至变色盛出备用;

5、豆豉放入锅内煸香,再倒入所有调味料烧至起泡;

6、加入炒好的鸡块,翻炒至均匀的裹上酱汁;

7、砂锅内加1/2大匙植物油烧热,放入姜片、大蒜、青红椒、干葱炒出香味;

8、倒入炒好的鸡块,盖上砂锅盖,沿锅边淋少许白酒,烧2分钟即可上菜。

香辣鸡公煲 *** 版”(附秘制调味油配方 *** )

与传统清香味的汤煲不同,它属于麻辣味型。主料选用乌冠乌脚的农家散养土鸡,盛器是陶制的砂煲,调味的方式、 *** 则与火锅接近;当然,由于味道重麻辣鲜香,故秘制调味油的用量也偏重。

由于切配房与炒料房隔得远,所以根本看不到炒料房的人是如何 *** 鸡煲的。两个月后,原来在炒料房里做员工餐的师傅辞职了,我便主动要求去做员工餐。经过一段时间后,虽然我基本掌握了鸡煲 *** 的全过程,但炼制秘制油时的香料配比却始终没能搞清楚。后来才听说,那位火锅师傅炼油加香料前,都是他一个人在库房里先配制好以后,才拿到炒料房来的。

机会终于等来了,每个月末店里各个部门都要盘存货物,然后把清单交到财会人员那里记账。而我就去主动帮着盘点存货数量,并且特别关注库房里香料的存量记录。

盘存后的次月,火锅师傅每炼一次油我都要偷偷做记录,以便可以累计出当月炼油的总次数。等到月底再盘存时,我又去将两月里各种香料的前后存量相减,就大致算出了当月各种香料的用量,当然也就能估算出炼制秘制油的配方了。

后来,我开始私下按照这个配方去 *** 鸡煲,结果效果很不错。下面就是我“翻版”麻辣鸡煲的完整 *** 过程。

原料(初加工批量):桶装纯净水50千克,净光 *** 只(约15千克)干香菇 *** 克,干茶树菇100克,老姜(拍破)80克,蒜瓣80克,大葱150克,胡椒20克,料酒300克。

调料(炒制单锅用量):泡椒100克,秘制调味油500克,郫县豆瓣酱100克,鲜小米辣50克,花椒5克,芋儿100克,水发笋段100克,盐、白糖、味精各适量。

秘制调味油的炼制:

原料:色拉油50千克,糍粑海椒15千克,花椒1500克,紫草75克,大葱 *** 0克,八角400克, *** 300克,桂皮200克,草果150克,香叶70克,砂仁70克,小茴香50克,白蔻50克,灵草30,克肉豆蔻30克,白芷20克,排草20克, *** 10克。

制法:

1、把草果、白蔻、砂仁拍破后,手工除去籽,然后与其他辛香料一起用小型粉碎机(不加筛网)打碎成大颗粒状。

2、色拉油入不锈钢桶里烧热后,关火投入紫草,把油搅匀调成紫红色时,加大葱以增香,稍凉后再捞去大葱和紫草不用。

3、待油温降至四成热时,放入糍粑海椒并边放边搅动,稍后放入花椒及13种香辛料。

4、重新开中小火将油继续加热,边加热边用钢铲去搅动桶里边的油料,目的是使其不糊不粘桶。

5、将油炼制2小时后,舀一勺油起来察看,如果油色红亮、清澈不浑浊,便说明油炼得差不多了。

6、关火加盖让桶里的油焖制一个晚上,让麻辣辛香味慢慢地浸入到油里边后,沥出料渣即得秘制油。

*** *** :

(1)把治净的光鸡斩成块,投入沸水锅里先汆去血水;另把干香菇、干茶树菇用水泡胀,芋儿、笋子则下锅煮熟后,用凉水漂起来待用。

(2)取一块干净的纱布,将泡过的香菇、茶树菇以及姜、葱、蒜、胡椒等料包起来后,待用。

(3)一个大不锈钢桶里注入纯净水和泡菇的水,放入纱布包和鸡块并开大火烧沸后,加入料酒并撇去汤面上的油沫,稍后改小火慢慢煨炖,待鸡肉炖至八成熟时关火,然后让其一直浸泡在汤中(这是为防止捞出鸡块后吹干水分而影响到口感)。

(4)开餐前,先捞去纱布包不用,再将净锅上火,注入秘制调味油烧热后,取750克鸡块入锅煸炒至紧皮,然后加放豆瓣酱、小米辣、花椒、泡椒等继续煸炒至出香,等加入炖鸡的原汤烧开后,加入盐、白糖、味精调味。

(5)最后全部翻入已经预热过的砂煲里,加放芋儿、笋段等烧入味便可上桌。

注:麻辣鸡煲一般要吃原汤味碟:味碟碗里须备葱花、香菜末和蒜泥。临上桌时,在砂煲里舀一些原汤兑进去便好。
